Iron Root Refresher

In the whole food plant based kitchen the goal is simple: make every ingredient work harder. The Iron Root Refresher does exactly that. Inspired by the traditional haymaker’s punch from the 1800’s used to hydrate farmers working in hot, sunny fields, this modern take transforms a humble tonic into a functional powerhouse.

Fresh ginger brings a warming, anti-inflammatory kick while the molasses adds a deep, mineral richness. Raw apple cider vinegar rounds it out with a bright tang and probiotic potential.

The result is a bold, restorative drink – spicy, earthy, and refreshing.

To serve, simply pour a shot of the Iron Root Refresher over ice and top with chilled club soda. The deep, spiced concentrate softens into something light and effervescent, with the ginger opening up and the molasses adding just enough depth to keep it grounded. Ingredients

  • 3 pieces fresh ginger root washed, sliced into thin pieces (peel using potato peeler or skin on is fine too)
  • 1/2 cup apple cider vinegar
  • 1/3 cup molasses
  • 3 cups water
  • Lemon slices
  • Fresh rosemary, mint, or basil optional
  • Club soda

Directions

  1. Place ginger in a pot with the water and bring to a boil. Remove from heat. Allow the ginger to steep for 1 hour.
  2. Combine the ginger tea, apple cider vinegar, and molasses in a jar with a lid and stir until the molasses is completely dissolved.
  3. Place the mixture in the refrigerator and allow it to infuse for at least 24 hours.
  4. Remove the ginger using a strainer.
  5. Shake thoroughly.
  6. Pour a shot (44 ml.) of the mixture into a 4 oz. glass. Add a few ice cubes. Fill the glass with club soda. Add a lemon slice. Garnish with a sprig of fresh rosemary, mint, or basil (optional).

Garbanzo Bean Salad with Shake Your Tahini Dressing

The childhood comfort of a creamy egg salad sandwich doesn’t have to be left behind – it just gets a serious upgrade. I set out to recreate that nostalgic flavor in a way that actually supports how I eat now; and the results surprised me. This garbanzo bean salad delivers the same rich, satisfying texture, but with a bright, tangy kick from my “Shake Your Tahini” dressing that takes it to another level. It is hearty, fresh, and packed with flavor – so good, I made a big batch and happily ate it for three days straight. This isn’t just a substitute – it is a replacement worth craving.

Ingredients for the Salad

  • 1 can unsalted or lightly salted garbanzo beans (chickpeas) drained, rinsed, lightly mashed
  • 1/2 cup red or green bell pepper chopped
  • 1 carrot chopped
  • 1/2 cup red onion chopped
  • 1/3 cup walnuts chopped
  • 1/3 cup black raisins
  • 1/3 cup unsweetened canned mandarin oranges drained, patted dry, cut in small pieces
  • Sprouted greens
  • Salad greens
  • Ezekiel 4:9 sprouted grain bread
Garbanzo beans, carrot, red bell pepper, red cabbage, red onion, mandarin oranges, walnuts, black raisins, sprouted greens, salad greens (not pictured)

Ingredients for Dressing

  • 1/4 cup lemon juice
  • 2 tbsp date syrup
  • 2 tbsp tahini
  • 1 tbsp Dijon mustard
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ginger powder
  • 1/4 tsp black pepper
Place all the ingredients in a jar with a lid and shake.
This dressing is not only wonderful on this salad but also enhances grain bowls, leafy green salads, roasted vegetables, wraps, or as a dip.

Directions

  1. Mix all the dry ingredients together
  2. Stir in the dressing
  3. Layer salad greens on top of toasted Ezekiel bread
  4. Spread the bean salad over the greens
  5. Top with sprouted greens
  6. Cover with the second slice of toasted bread
