Ingredients:
- 1 container sweet grape tomatoes halfed
- 1 red bell pepper seeded and coursely chopped
- 1 small sweet red onion thinly sliced
- 1 cup chopped parsley
- 1 can chickpeas rinsed and drained
- 1 can dark red kidney beans rinsed and drained
- 1 13.75 oz. can artichoke hearts rinsed drained and cut in half
- 2 tbsp lemon juice
- 2 tbsp balsamic vinegar
- 1 1/2 tsp. spicy brown mustard
- 2 tbsp date paste
- 1 garlic clove minced
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp basil
Directions
Combine the first 7 ingredients in a bowl. Combine remaining ingredients in a bowl and wisk. Pour over salad. Chill before serving.
